Easy, Nutritious, & Filling Morning Oatmeal

I’ll let you in on a secret: I used to HATE oatmeal as a kid. It never seemed to settle easily into my stomach, despite my mom’s best efforts. As an adult, however, it is my breakfast go-to. And thankfully my stomach is fine with it now! 

Now most mornings I ready a bowl of this oatmeal recipe, which keeps me fueled for the remainder of the morning! And, better yet, the way I prepare this recipe doesn’t require an active presence at the stove…because I tend to use an electric kettle to heat the water. Here is the link to the electric kettle I’ve used for years. But if you have to heat water on the stove that is fine too! Now let’s make some oatmeal to get ready for the day! 

Ingredients for 1 Serving

1/3 cup Oats

1/2 cup heaped Blueberries (I use frozen blueberries) 

Sprinkle Of ground cinnamon 

Tablespoon unsalted chunky peanut butter OR Walnuts 

1 banana

Drinking water 

Directions 

1) Boil water. You will need enough to cover the contents of your bowl…and perhaps enough for your morning tea or coffee too! 

2) If you are using frozen blueberries, as I do, start with putting the blueberries in the bowl. If you are using fresh blueberries, then save this for later…start with step 3.

3) Add the oatmeal. A serving of oatmeal is typically 1/3 cup, but you can add more or less depending on your hunger level. I tend to be a touch less hungry in the morning, so I usually add a little less than a 1/3 cup. My husband is the exact opposite! You don’t need to change the other ingredients’ amounts for differing oatmeal amount unless you wish to. 

4) Sprinkle cinnamon on top. 

5) Add the freshly boiled water, enough so that the oatmeal and frozen blueberries are just barely covered. It is important that the water is boiling hot so the oatmeal will cook. It will also warm the frozen blueberries (but don’t worry, the frozen blueberries will cool the water to a cool eating temperature!) 

5) I typically add the tablespoon of peanut butter now and let it sit in the water. If you are using walnuts wait until the last step. 

6) Let sit for 5-10 minutes to soften and cook. If you are going for a morning run, this is a great time to go! (And your breakfast will be ready when you’re back!) 

7) Add the toppings. For me, this is a half or whole banana in slices (depending again on hunger level). If using fresh blueberries or walnuts add these in now too. 

8) Bon appetit! 

I personally love the creamy mix of sweet banana and crunchy peanut butter with the soft oats. The blueberries add a different sweetness to the texture, with juicy bursts for each berry. All of this is balanced with a hint of cinnamon—perfect for balancing my natural sweet tooth! 

This entire breakfast is without any added sugar and low on any processed ingredients (with exception of the peanut butter?), making it good for your health. No sugar crashes coming after this meal! I find that the blueberries and banana give me enough natural sweetness to jump start my morning, whilst the nutrients and nut protein keep me powered for the morning hours. 

I recommend pairing this oatmeal with your favorite morning cup of coffee or black tea!
